I hope you have had a good month of June?
I’ve been busy largely with my Qigong/Tai Chi Teacher Training course this month. The upshot of this intense training means I can start running my own Qigong classes in a residential care home near me from next week. The Activities Manager there tells me the residents are really looking forward to the sessions as they have not seen anybody or done anything much due to Covid for such a long time. I too am looking forward to getting them all moving and feeling positive again!
I did manage a few new recipes though, building on the Mango Cake and Kulfi recipes from last month plus taking advantage of the elderflower season from their fragrant aroma in the hedgerows on my daily walks to the kitchen and into three different varieties of Elderflower Cordial.
The first was the standard Lemon, followed by Citrus (lemon, lime and orange) and Pineapple. One avid follower of Usha’s Very Own, Teresa says:
“Cordial with pineapple - great - refreshing, nicer than the cordial I had in a pub yesterday! Similarly the one with the citrus flavours has a very good taste but my favourite is the one with pineapple”
Thank you Teresa for your feedback. Pleased I was able to introduce you to a couple of new flavours.
I also added a Passion Fruit & Ginger Kulfi (dairy and vegan versions) so all we need now is the sunshine. We have our drinks and ice creams sorted!
The Lime Drizzle Mango Cake from last month was such a hit, I made an Elderflower & Almond Cake. Two versions, one a sandwich cake with elderflower butter cream filling using the home made elderflower cordial and the other a ‘loaf’ cake. This healthy recipe is especially for our gluten-free and vegan friends but of course can be enjoyed by all. I’ve used coconut sugar as a healthier alternative to white sugar.
Usha’s Very Own received a lot of positive feedback and new subscribers to our social media sites following features in publications in June so thank you once again Wiltshire Life, PlantBased and Vegan Life.
Hoping to be a lot more active in the Usha’s Very Own kitchen throughout July so keep your eyes peeled for more recipes and let me have your thoughts too please.
