Dear friends,
Summer has finally arrived, hoorah! It and the plants all seem to be a month behind this year. Hope this translates into Autumn being at least a month too late too!
It has been an amazingly full and fun month here at Usha’s Very Own.
A mixed bag of new recipes, something for everyone I hope. I enjoyed experimenting with gluten-free flours from Eurostar Foods and with the Indian mango season in full swing, mangoes.
Thus gluten-free dishes such as the Thin Crust Pizza, Spicy Mushy Pea Paranthas and the egg-less Lime Drizzle Cardamon & Mango Cake were born.
In the vain hope the sunshine (and Summer) may appear soon, I added dairy and vegan versions of Mango & Cardamon Kulfi and hey presto, summer arrived just a few days ago!
Whilst contending with the damp, miserable and grey days, I was tempted yet again with my all-time favourite go-to recipe for such weather, pakoras and made a variation, Broccoli Fritters served up with a hot cup of heart-warming Vegan Masala Chai.
For curry buffs (and gardeners amongst us who will soon have a glut of courgettes) I added a recipe for Courgette & Potato Curry and Plain Pooris to go with it. I also added Spicy Mushy Pea Pooris to the repertoire.
UVO has been featured in three magazines, all June 2021 editions. Wiltshire Life, featured my all-time favourite Pakoras recipe under the heading “A tasty treat with a hint of spice.” This magazine has been running for 75 years – they clearly have a great winning format which has moved with the times.
A national magazine, PlantBased has featured my Mooli Parantha recipe as part of its Homemade Breads section. Vegan Life, another national magazine, has given UVO a shout out as being socially connected, “Follow me Socially”
And what have you been up too? Feedback from one of UVO’s avid followers, Sara sums it up when she says:

I think your venture is fantastic & have tried several of your recipes (courgette & potato curry, mung dal, aloo gobi and the pakoras) - all brilliant! Thank you Sara very much for your comments. So pleased you are enjoying my food and it has made such a difference to your meals! This was indeed my aim when I started this venture.
In store for next month? I thought with the warmer and longer days ahead of us we may look at pickles, chutneys, lassi and refreshing summer drinks. Have you tried any of UVO’s recipes? Would welcome your feedback.
